Soup Recipes - A Delicious Comfort Food

Soup Recipes are very popular because soup is America's comfort food. Very popular in the winter, but most people eat it year round. It doesn't cost much to make, is quick to make, and just simply hits the spot!

Let me start with a homemade recipe I make regularly.

Homemade Chicken Noodle Soup Recipe

Ingredients
4 cups water
chicken flavored soup base - to taste (I use a powder mix - Millers)
cut baby carrots - about 20
can of peas - drained
parsley
2 skinless chicken breasts (substitute dark meat if you like - or a mixture)
noodles of your choice - vary them from meal to meal for a different texture

Add water, chicken, powdered base, parsley and carrots and bring to a boil. I use cast iron pots so it's easy to bring the water to a boil and then simmer it for a couple hours. You can also put it in a crock pot on low and let it cook all day.

Check how long it takes to cook the noodles. Make them up just before serving - then add the noodles and the peas and let it simmer for another 5 or 10 minutes so the peas get hot and the noodles absorb the chicken flavor. Cut the chicken into chunks - the chicken will be falling apart. Hold the chicken with tongs and cut with a meat scissors.

This is a delicious soup and is welcome at our home year round - and the leftovers are just as good.

Barley Soup

8 oz. of pearl barley
2 onions
4 potatoes
1/2 a teaspoonful of thyme
1 dessertspoonful of finely chopped parsley
3-1/2 pints of water
1/2 pint of milk
1 oz. of butter

Wash the barley, chop up the onions, slice the potatoes. Boil gently for 4 hours, adding the butter, thyme, pepper and salt to taste. When the barley is quite soft, add the milk and parsley, bring back to a boil.

Soup is ready
