Potato Recipes Are Always a Favorite

Potato recipes are always popular as almost everyone eats potatoes. Here are a few you should enjoy.

Sweet Potato Casserole

Here's a favorite of Laura Bush
8 medium sized sweet potatoes,roasted, peeled and passed througha fine mesh sieve
3 whole eggs, lightly beaten
1 cup half and half
1 tablespoon vanilla
1 tablespoon turbinado sugar
1 teaspoon salt
½ bag miniature marshmallows
cooking spray

Preheat oven to 350 degrees. In a large bowl, lightly mix all the ingredients except the marshmallows. Spray a 9 inch casserole dish with cooking spray. Pour the custard and top with a half bag of mini marshmallows. Bake for about a half hour. Keep warm for service.

Garlic Mashed Potatoes

1 lb (about 2 large) potatoes, peeled and quartered
2 C skim milk
2 large cloves garlic, chopped
1/2 tsp white pepper

Cook potatoes, covered, in a small amount of boiling water for 20-25 minutes or until tender. Remove from heat. Drain and recover. Meanwhile, in a small saucepan over low heat, cook garlic in milk until garlic is soft, about 30 minutes. Add milk-garlic mixture and white pepper to potatoes. Beat with an electric mixer on low speed or mash with a potato masher until smooth.

Terrific Stuffed Potatoe Recipe

4 medium baking potatoes
3/4 C low-fat (1%) cottage cheese
1/4 C low-fat (1%) milk
2 Tbsp soft margarine
1 tsp dill weed
3/4 tsp herb seasoning
4-6 drops hot pepper sauce
2 tsp grated parmesan cheese

Prick potatoes with fork. Bake at 425º F for 60 minutes or until fork is easily inserted.
Cut potatoes in half lengthwise. Carefully scoop out potato leaving about 1/2 inch of pulp inside shell. Mash pulp in large bowl.
Mix in by hand remaining ingredients except parmesan cheese. Spoon mixture into potato shells.
Sprinkle top with 1/4 tsp parmesan cheese.
Place on baking sheet and return to oven. Bake 15-20 minutes or until tops are golden brown.
