French Fried Potatoes

Traditional French Fries
Cut potatoes into 1/4-inch thick strips. Add to bowl of ice water. Drain and pat very dry on paper towels. In deep-fat fryer or heavy saucepan, heat about 4 inches of vegetable oil to 390ºF. Place layer of potato strips in fryer basket and immerse in hot oil or, if using a saucepan, add a few potato strips at a time to hot oil. Cook about 5 minutes or until golden brown. Drain on paper towels; season with salt.

Skinny Oven French Fries

Heat oven to 475ºF. Lightly coat 15 x 10-inch baking pan with no-stick cooking spray. Cut potatoes lengthwise into thin wedges. Arrange in even layer on baking pan; lightly brush all sides with vegetable oil. Sprinkle with salt and pepper; bake about 30 minutes or until crisp and golden brown, turning once or twice. Season again after turning, if desired. For variety, use garlic or seasoned salt in place of plain salt.
