Easy Recipes - Quick to Make

Potato recipes you will love.

Easy recipes should be quick and easy to make and also not cost a lot. Every cook should have their share of easy recipes at their disposal for times you simply do not have a lot of time to cook.

I'll try to bring you as many of these recipes as I can, with the focus not only on being easy to cook, but also on taste.

Taco Salad

1 lb Ground beef
1 pk (1 1/4 oz) taco seasoning
1 md Head lettuce, shredded
2 md Tomatoes, seeded and chopped
1 c Bottled Catalina dressing
4 c To 5 corn chips, crushed
2 c (8 oz) shredded cheddar cheese

Brown lean ground beef and drain. Add taco seasoning. Combine beef, lettuce, tomatoes, dressing, corn chips and cheese in a large serving bowl; toss well. Serve immediately.

Quick Casserole

1 tb Butter
1 tb Chopped onion
1 c Chopped celery
3/4 c Uncle ben's rice
1 cn Mushroom soup
1 cn Chicken & rice soup
1 cn Beef consomme

Saute the onion & celery, then add tthem to the other ingredients in a casserole dish & bake at 350 degrees until rice is cooked. Usually about 1 hour.

Easy Egg And Potato Scramble

1 Fresh Idaho potato, pared and diced
1/2 c Chopped onion
1/2 c Chopped green or red pepper
6 Eggs
1/3 c Milk
1/2 ts Salt
1/8 ts Pepper
Dash garlic powder

In a 9 inch microwave-safe pie plate combine potatoes, onion and green pepper. Cover loosely with plastic wrap and cook on High 7 to 9 minutes until the potatoes are tender. In a seperate bowl, mix together the remaining ingredients. Pour over the potatoes. Loosely cover with waxed paper; cook on High 4 to 6 minutes or until eggs are just set as desired, stirring twice.

Let stand 2 minutes.
