More Simple Desserts That Taste Great.

Some simple desserts to tickle the taste buds.

Texas Sheet Cake
Sift together:2 cup sugar2 cup flour½ teas. salt

Bring to boil:4 tabl. cocoa2 sticks margarine1 cup water

combine in small bowl:2 beaten eggs½ cup sour cream1 teas. vinegar1 teas. vanilla1 teas. baking soda

Add the two mixtures to the flour mixture and mix well.Pour into a greased 11 x 17 cookie sheetBake at 375 for 20 min.Remove from oven

Mix frostingBring to boil-4 tabl. cocoa1 stick margarine6 tabl. milkadd 1 lb powder sugar1 teas. vanilla½ cup milkspread on slightly warm cake

Spice Cake with fruit
1 spice cake mix1 can peaches, mandarin oranges,marchino cherriesand pineapple tidbitsCut the fruit up and mix - make 2 cups worth. (Munch on the leftover fruit) :)Add ¾ cup nuts. Use 3 small eggs or 2 lg onesUse juice from fruit to replace water called for in cake mix. Make a little less liquid than cake mix calls for. Bake 5 to 10 min. longer than cake mix recommends. Frost with German sweet frosting mix or Butter cream icing

Butter Cream icing½ cup margarine½ cup shortening1 teas. vanilla1/8 teas. salt4 cups powdered sugar2-3 tabl. milkBlend well

Carrot Cake
Cake base
Ingredients:
All purpose flour - 3 Cups
Sugar - 2 Cups
Salt - 1 Table Spoon
Cinnamon - 1 Table Spoon
Apple Sauce -1-1/2 Cups[OR]1 Cup Oil
Larges Eggs -4 [OR]5 Eggs whites
Vanilla extract - 1 Table Spoon
Pureed Carrots - 1-1/2 Cups [One 16 Oz. bag]
pineapple -3/4 Cup(optional)
Method:
Preheat oven to 350 degrees. Grease two 9 or 10 inch spring form pans.
Sift dry ingredients into a bowl. Add applesauce or Oil, eggs and vanilla. Beat well.

Fold in carrots and Pineapple.
Pour batter into the prepared pans. Set on the middle race of the oven and bake for 50 minutes, until the edges have pulled away from sides and a cake tester inserted comes out clean.
Cool on cake rack for 3 hours. Fill cake and frost sides with cream cheese frosting.

Fruit Pie
Great summer dessert

Bake 2 pie shells
Mix 8oz. pkg. cream cheese-soft
1/4 cup sugar
1 teaspoon grated lemon peel
Smooth over cooled pie shells
Slice 6 cups fresh fruit [strawberries,grapes,peaches,
bananas,pears etc]
Layer fruit in design. I start at outer side of the shell and start laying out the desserts around the pie
and end up in the middle. I usually make a circle around the pie with the same fruit, then start the next circle with a new fruit.

Mix 2/3 cup apple juice [I buy the juice boxes]& 2 teaspoon corn starch
Microwave 2-2 1/2 min. Stir each min.

Pour over fruit. I use lemon juice on the fruit that will turn color

This is such a delicious and simple dessert. My husband can eat a pie in 1 session.
