Fruit Pie Great summer dessert Bake 2 pie shells Mix 8oz. pkg. cream cheese-soft 1/4 cup sugar 1 teaspoon grated lemon peel Smooth over cooled pie shells Slice 6 cups fresh fruit [strawberries, grapes, peaches, bananas, pears etc] Layer fruit in design. I start at outer side of the shell and start laying out the desserts around the pie and end up in the middle. I usually make a circle around the pie with the same fruit, then start the next circle with a new fruit. Mix 2/3 cup apple juice [I buy the juice boxes]& 2 teaspoon corn starch Microwave 2-2 1/2 min. Stir each min.
Pour over fruit. I use lemon juice on the fruit that will turn color This is such a delicious and simple dessert. My husband can eat a pie in 1 session.
