Barbecue Recipes to Make Your Next Barbecue Sizzle!

Barbecue Pork Roast Recipe

3 pounds beef or pork roast
1/2 cup chopped onion

Mix all ingredients but meat in saucepan over medium heat. Simmer for 3-5 minutes. Pour over roast in roasting pan. Cook in 325~ oven for 3 hours. Baste frequently. Shred roast after it has cooled. Serve with rolls or on noodles. The roast will just fall apart - juicy and tender.

Barbecue Salmon Recipe

4 4-6 oz. salmon steaks

Barbecue Sauce:

3 tb Melted butter
1 tb Lemon juice
1 tb White wine vinegar
1/4 ts Grated lemon peel
1/4 ts Garlic salt
1/4 ts Salt

Combine the sauce ingredients stirring thoroughly. Generously brush both sides of the salmon steaks with mixture.

Barbeque on a well oiled grill over hot coals. Make a tent of foil or use barbeque cover and place over salmon. Barbeque 6-8 minutes per side depending on the thickness of your steaks.

Baste frequently. Turn once, brushing with sauce. Steaks should flake easily when tested with a fork.

Grilled Chicken Sandwiches Recipe

1/2 c White wine or apple juice
1 tb Chopped fresh parsley
1 ts Instant minced onion
1/2 ts Chopped fresh or 1/8 teaspoon dried thyme
4 Boneless, skinless chicken - breast halves (about 1 -pound)
3 tb Mayonnaise or salad dressing
1 To 2 teaspoons prepared mustard
1 tb Chopped fresh parsley
1/2 ts dried thyme 8 slices Sandwich breadLettuce
1 Tomato, cut into 8 slices

Mix wine, 1 tablespoon parsley, the onion and 1/2 teaspoon thyme; reserve. Cover and grill chicken 5 to 6 inches from medium coals 10 to 20 minutes; turn chicken. Cover and grill 10 to 20 minutes longer, turning and brushing 2 or 3 times with reserved wine mixture, until done.

Mix mayonnaise, mustard, 1 tablespoon parsley and 1/2 teaspoon thyme; spread on 4 slices bread. Top each with lettuce, 1 chicken breast half, 2 slices tomato and remaining bread.
